Oat and raisin bars.
These are very quick and easy to make bars. It is amazing how good they taste with just 3 ingredients! They are perfect for breakfast on the go or as a pre-workout snack, you know, for raisin’ that bar…Also excellent for toddler snacks, school lunch boxes and husband’s munchies. An all-rounder indeed!
I use my US measuring jug here. I find it easier than measuring everything with kitchen scales.
- 2 cups dark raisins
- 2 cups rolled oats
- 2 tbsp raw coconut oil
Put the kettle on. When the water is boiled, place the raisins in the bowl and cover them with hot water so they are just under it but not floating. Leave to stand for 10 minutes. Keep the water from soaking.
Preheat the oven to 170C
Drain the raisins (keeping that soaking water) and place them in the food processor together with the rest of the ingredients. Mix on medium or low speed so that the mixture is coarse and sticky. If it’s too liquid – add more oats; if too dry – add more water from raisins.
Scrape the mixture into a small square baking tray, or small bread tin, or even a Pyrex dish, press in and smooth the surface. You don’t need to butter the dish, coconut oil in the mixture will make it oily enough.
Bake for 15 minutes, until golden. Let it cool, then serve!
This will be a small batch. Double the ingredients if you want to share 🙂
These bars should be OK to keep for a week in a tin box, lined with grease paper. However, we eat them withing three days, so I've never tested this theory.
